The olive is the fruit of the olive tree. Because it is a fruit and as such it is exposed to the atmosphere and the oxidation that comes with it, it developed an excellent natural defensive mechanism against oxidation. This is the reason why the olive amongst other nutrients is rich in polyphenols and lutein.
- Polyphenols prevent the oxidation of lipoproteins, thus protecting from cholesterol deposits in blood vessels and reduce the risk of heart and blood vessels disorders.
- Lutein protects the cells from premature aging and improves eye sight.
- The vitamin E present in olives offers cellular protection against free radicals’ presence in the body, which are considered to be responsible for certain types of cancer.
- Regular consumption of olives is associated with the stabilization of the blood pressure, and is negatively related with the development of diabetes.

Olive consumption is at the heart of the Mediterranean diet. Recently UNESCO declared the Mediterranean diet as Immaterial Human Heritage. The system is rooted in respect for the territory and biodiversity, and ensures the conservation and development of traditional activities and crafts linked to fishing and farming in the Mediterranean communities. Women play a particularly vital role in the transmission of expertise, as well as knowledge of rituals, traditional gestures and celebrations, and the safeguarding of techniques.
The Mediterranean Diet is also the best way to prevent many diseases like: lung diseases, asthma, many allergies, Parkinson, Alzheimer, and also for keeping the bone mass in elderly people. Recently, it has been related with low incidences of many types of cancer.
